Yuma Fritas to Open in Rochester, Bringing Cuban Flavors by Mid-December

UPDATE: A new culinary delight is set to transform the Rochester dining scene as Yuma Fritas, a “Cubanish” restaurant, is on track to open in the former Taco Jed space by mid-December 2023. Located at 808 Broadway Ave. S. in the Soldiers Field Plaza, this exciting venture is spearheaded by acclaimed Chef Justin Schoville and partner Lindsay Zubay of Championship Dining.

Yuma Fritas aims to bring an authentic taste of Havana, specializing in fritas—Cuban street burgers topped with shoestring potatoes. This fresh concept comes after the closure of Taco Jed in October 2023, which served the community for seven years.

Chef Schoville shared the inspiration behind Yuma Fritas, stemming from a memorable trip to Florida. “I got introduced to fritas in Miami. It’s been an idea that my wife and I have been playing around with for a little while,” he explained. The menu will feature various options, including chorizo, beef, chicken, and fish, all seasoned with unique spices and sauces.

In an exciting twist, the term “Yuma” is Cuban slang for foreigners, particularly Americans. Schoville noted that while they do not have Cuban heritage, they plan to add their own flair to traditional dishes, branding the restaurant as “Cubanish.”

In addition to fritas, diners can anticipate classic Cuban sandwiches, plant-based alternatives, and sides such as fried plantains and coconut ginger rice. The restaurant will also serve batidos—tropical smoothies made from ingredients like coconut and guava.

Yuma Fritas will feature a vibrant bar offering a full selection of tropical cocktails including mojitos and piña coladas. Notably, the restaurant will not offer fountain sodas, opting instead for imported bottled beverages made with cane sugar.

The restaurant plans to employ between 20 to 30 staff members and will be open seven days a week, catering to both lunch and dinner crowds. Schoville believes the transition from Taco Jed to Yuma Fritas will be straightforward, stating, “We just need the three Ps—paint, plants, and a playlist.” He promises a lively atmosphere with a Cuban-themed playlist to enhance the dining experience.
