UPDATE: The ownership of the iconic Flagstaff House restaurant, located at 1138 Flagstaff Road above Boulder, has just changed hands. Co-owners Adam Monette and executive chef Chris Royster confirmed the purchase of the property and land for a sum of $8.3 million, completed on December 22, 2023.
In an urgent message to local diners, Monette expressed commitment to preserving the restaurant’s renowned cuisine and service. “We wanted to maintain the security of the restaurant and put ourselves in position to provide everything Flagstaff House offers into the foreseeable future,” he stated. This transition marks a significant moment for the family-run establishment, which has been a culinary icon for over five decades.
The restaurant was founded by Monette’s grandfather, Don Monette, in 1971. His legacy continues as Adam and Royster take the reins, aiming to uphold the high standards set by previous generations. “We want to keep it in the family for 100 years,” Monette emphasized, highlighting their long-term vision.
Just before he passed away in February 2023, Don Monette transitioned ownership to his sons, Mark and Scott, who sold their stakes to Royster and Adam, ensuring that the restaurant remains a family affair. “We’ve been partners with Scott for many years,” Adam said, acknowledging the risks but expressing optimism about the future.
